Twenty pounds of Coho & Chinook fillets put into the brine(1 cup salt;3 cups dark brown sugar);1 cup maple syrup;garlic powder & sweet thai chili sauce. Brine,rinse and cure for 48hrs. Glaze;1/2 cup of liquid honey & maple syrup;2 oz brandy.

1st load into the smoker and figured might as well throw a couple of blocks of cheddar...they'll be ready in 3 hrs in cold smoke mode.
