Has anyone from the Medellin area run across regular "breakfast sausage" in bulk form, like if you wanted to make a Sausage McMuffin or sausage and eggs? I would drive to any market that makes such an item. I also love to mix 1/2 sausage with hamburger meat to make my own spaghetti sauce.

Basic sausage is really easy.
3/4 c salt
1/2 c Black Pepper
1/2 sage
Mix well in a Ziploc bag - Use 1 tbsp per LB of meat. Run the meat thru the grinder the first time add your spice mix and run thru the grinder again.
Want some differant flavor add Red pepper flacks,Garlic Powder, etc etc etc. Make into patties, will freeze well put paper between the patties so they dont freeze together.
If you dont have a grinder plenty of meat markets do and will grind it for you.The guy I use here in town I will mix up meat I want ground and give him 5mil or 10 mil to grind for me.

Thanks Dan, I don't know anyone who lives on a Finca that doesn't have a grinder.

We have sausage patties on the breakfast menu at our resort. Look and taste exactly the same as the ones served by Mcdonalds. Called MAPLE LEAF Sausage Rounds. 12 per box. My wife gets them from a food distributor in Medellin. WE used to buy them at PriceSmart, but were way more expensive than at our distributor. - JAMES

One of the food items I missed most while living in Colombia. Sausages. Beef sausages, Chicken sausages, lamb sausages, pork sausages. Sausages readily available at any Australian supermarket .

ozgringo that is because Colombians actually use the whole animal, not grind up the trash meat and make sausages.

I haven't tried that yet, but they taste so good I hate to waste one. Gallito - Maple Leaf may be a Canadian company,, but I don't think that affects the taste of their sausage patties.

Fish has too much mercury, chicken is full of growth hormones, pigs are fed antibiotics and bacon and ham have too much salt. Red wine is fine though.
